Living Gluten Free in New Brunswick

I watched a show recently about how popular a Gluten-Free diet is now and all the products that are available, I believe it was Marketplace.  They mentioned shampoo and that it shouldn’t cause a problem for those who are gluten-free.  Well, I disagree with that remark.  Not long after I became gluten-free, I was feeling very good, no nausea, diarrhea, etc.  All of a sudden I started feeling a lot of nausea again.  I was puzzled because I knew I had not eaten any gluten.  I started checking and rechecking labels on everything I ate.  I started thinking about any new products I had started using lately.  Having just changed my shampoo, I decided to check the label … sure enough, it had WHEAT.  I stopped using it right away and in a couple days I was again nausea-free.  That, for me, was a confirmation that gluten in shampoo can affect a Celiac.  I don’t know how it does, but it does and no one can convince me that it doesn’t because I experienced it.  Heck, just breathing in flour when baking something for my husband caused me to be sick and I was very careful to not let the flour fly around, I believe I had even used a mask.  So, my advice, don’t take a chance on using shampoo with gluten.  😀


Super Easy Gluten-Free Peanut Butter Cookies

(from Kraft Peanut Butter)

Prep Time: 10 min

Total Time: 30 min

Makes: 12

peanut butter cookie







1 cup KRAFT Peanut Butter

1/2 cup sugar

1 egg
PREHEAT oven to 325º F. Mix peanut butter, sugar and egg.

ROLL into 1-inch balls. Place, 2 inches apart, on baking sheets. Flatten with fork.

BAKE 15 min (Do not overbake.)

Let stand on baking sheets 5 min. Remove to wire racks; cool completely.

Jazz It Up … Personalize the dough by adding 1/2 cup raisins or chopped, dried cranberries or apricots to the dough before rolling into balls.

Here is a recipe that I found online when I first went gluten-free.  It was developed by Jules Shepard a gluten-free cookbook author.  She now sells a version of this flour on her website … click on this link to find more recipes Jules Shepard.

1 cup rice flour

1 cup potato starch (not potato flour)

1 cup cornstarch

1/2 cup corn flour

1/2 cup tapioca flour (or tapioca starch)

4 teaspoons xanthan gum


Mix all ingredients together; store in an airtight container. Use, cup for cup, in recipes that call for normal all-purpose flour (except for bread unfortunately).

NOTE:  I usually make a double batch of the flour.
